Umm Ali, uno dei dolci più famosi del mondo arabo.
Umm, in arabo è mamma, Ali invece è un nome, il dolce quindi si tradude come “la mamma di Ali”.
Dolce povero della tradizione egiziana fatto con pane raffermo, latte, uvetta, cannella, pistacchi e noci.
Ne esistono oggi numerose varianti, con gelato, cioccolato, datteri.
L’origine del nome probabilmente fa riferimento a Umm Ali, una delle migliori cuoche di un villaggio che si trovò costretta a cucinare un dolce in occasione della visita del sultano e, non avendo altro che pane e latte, riuscì a creare l’Umm Ali.
È un dolce molto comune durante il mese di Ramadan, gli odori delle spezie mischiati agli aromi, inondano i buffet del profumo caldo.
